Ingredients
For the Red Velvet Cake:
-
All-purpose flour: I use a small amount of flour to give the cake its light, fluffy texture.
-
Sugar: A touch of sugar to balance the flavors and add a bit of sweetness to the cake.
-
Cocoa powder: The cocoa powder gives the cake that subtle chocolatey richness we love in red velvet.
-
Baking powder: Just a little baking powder helps the cake rise and become perfectly soft.
-
Milk: The milk ensures the batter stays moist and easy to mix together.
-
Apple cider vinegar: This little ingredient is key to creating the perfect crumb texture in the cake.
-
Butter (melted): Melted butter adds richness and flavor, making the cake extra tender.
-
Red food coloring: The red food coloring gives the cake its classic vibrant color that makes it so eye-catching.
For the Butter Cream:
-
Sugar (powdered): Powdered sugar gives the buttercream its smooth, melt-in-your-mouth texture.
-
Butter (room temperature): Softened butter is essential for whipping up a light, creamy frosting.
-
Milk: A bit of milk helps loosen the buttercream for easier spreading and dipping.
-
Vanilla essence: A dash of vanilla essence adds a lovely flavor that enhances the sweetness of the frosting.
For the Cake Pops:
-
Prepared red velvet cake: The crumbled red velvet cake forms the base of the pops, combining with the frosting for a perfect bite.
-
Prepared buttercream: The buttercream is mixed into the cake crumbs, making it stick together and adding creaminess.
-
Wooden sticks: The sticks are what turn the cake balls into pops, making them easy to eat and fun to hold.
-
White chocolate (melted): The melted white chocolate acts as a coating, adding sweetness and holding everything together.
-
Sprinkles: I love adding sprinkles to the cake pops for a festive touch and extra crunch!

1. Start by making the mug cakes. Mix all the ingredients together until you have a thick batter.

2. Transfer the mixture into a microwave/oven-safe cup.

3. Microwave for 70 seconds to 1 minute, or until the cake rises. If using an oven, preheat to 180°C and bake the mug cake for 15-20 minutes. Check with a toothpick to ensure it’s fully cooked.
4. While the cake is baking, prepare the buttercream. Whisk the butter in a bowl until it forms peaks. If using a hand whisk, this will take about 5 minutes; with an electric whisk, it will take less than half the time.
5. Add the sugar and whisk again until smooth.

6. Stir in the milk and vanilla essence, and whisk until you have a smooth frosting.
7. Once the cake is done, let it cool to room temperature.
8. Once cooled, crumble the cake into a mixing bowl.

9. Add the prepared buttercream frosting to the crumbled cake and mix well.

10. Scoop small portions and roll them into round balls.

11. Dip a bamboo or wooden stick into melted white chocolate and insert it into each ball. Refrigerate for 10 minutes.

12. After chilling, dip the balls into melted white chocolate and immediately garnish with sprinkles. Use Styrofoam to keep the cake pops upright.

13. Once all the cake pops are dipped and decorated, refrigerate them for 15 minutes.
14. Your cake pops are ready to enjoy!

Tips & Tricks for the Perfect Red Velvet Cake Pops
-
Use Room Temperature Ingredients: Make sure your butter, milk, and eggs (if used) are at room temperature. This helps the ingredients blend together smoothly, giving your cake pops a better texture.
-
Don’t Overmix the Cake Batter: Overmixing the cake batter can lead to dense, tough cake pops. Mix just until everything is combined for a light and fluffy texture.
-
Let the Cake Cool Completely: After baking, allow the red velvet cake to cool to room temperature before crumbling it. This prevents the buttercream from melting and ensures the cake pops hold their shape.
-
Crumble the Cake Well: The finer the crumbles, the smoother your cake pop mixture will be. Use your hands or a fork to break the cake into very small pieces.
-
Use the Right Amount of Buttercream: You don’t need too much buttercream to bind the cake together. Start with a small amount and add more if needed, making sure the mixture is moist but not too wet.
-
Chill the Cake Pops Before Dipping: Once you’ve formed the cake balls and added the sticks, chill them in the fridge for at least 10 minutes before dipping them in melted chocolate. This helps the cake pops hold their shape and prevents them from falling apart in the coating.
-
Melt the White Chocolate Properly: When melting the white chocolate, do it slowly over low heat or in short bursts in the microwave. This prevents it from seizing or becoming too thick. Adding a bit of vegetable oil or shortening can help make the chocolate more smooth and easier to dip.
-
Add Fun Toppings: Feel free to get creative with sprinkles, colored sugars, or even edible glitter for a little extra fun and color. It’s a great way to personalize your cake pops!
-
Work in Batches: If you’re making a large batch of cake pops, work in smaller batches for dipping and decorating. This way, the chocolate stays at the right temperature, and you’ll have more control over the coating.
-
Use Styrofoam to Hold the Pops: After dipping, place the cake pops in a Styrofoam block or cake pop stand to keep them upright while they set. This will ensure the coating doesn’t smudge or drip.
