Weeknights can be so hectic in my house, and honestly, the last thing I want to do after a busy day is spend hours in the kitchen. That’s why I absolutely love my air fryer. It’s one of those kitchen gadgets that has truly changed the way I cook. From juicy chicken to crispy veggies, it makes dinner not only quicker but also way tastier with a lot less mess.

Over the years, I’ve tested so many air fryer recipes, and I’ve narrowed down some of my absolute favorites for weeknight dinners. These meals are simple, full of flavor, and don’t require a ton of ingredients or prep time. I know how much it helps to have a list of go-to recipes ready when you’re trying to get dinner on the table fast, so I’ve rounded up a collection that I think you’ll love just as much as my family does.

Whether you’re craving something hearty and comforting or light and fresh, there’s a little bit of everything in this list. The best part is, every single recipe is cooked in the air fryer, so cleanup is a breeze. So if you’re ready to make weeknight dinners easier (and a whole lot more delicious), let’s dive into these 23 air fryer dinner recipes that will save you time without sacrificing flavor.

1. Air Fryer Accordion Potatoes

Air Fryer Accordion Potatoes

I have to say, these Air Fryer Accordion Potatoes are one of the most fun (and delicious) potato recipes I’ve made in my air fryer. They look fancy with their crisscross pattern, but they’re actually really simple to put together. The air fryer gives them the most irresistible crispy edges while keeping the inside fluffy and soft, and with just a drizzle of olive oil and a little salt, they turn into the perfect side or even a main dish if you’re in the mood for something lighter. This is one of those recipes that makes me feel like I’ve put in a ton of effort when really, the air fryer has done all the hard work!

Servings: 4

Ingredients:

  • 2 lbs Golden potatoes
  • 5 tbsp olive oil
  • Salt, to taste

Instructions:

  1. Peel the potatoes and rinse them under cold water. Pat them dry with kitchen towels.

  2. Slice the potatoes into quarters or about half-inch thick pieces.

  3. Place the potato slices on a cutting board and carefully make thin cuts on one side, using chopsticks on each side to avoid cutting all the way through.

  4. Flip the potato slices over and cut diagonally on the other side to create a crosshatch pattern.

  5. Drizzle the potatoes with olive oil and season them with salt.

  6. Cook the potatoes in the air fryer at 350°F for 30–35 minutes, flipping them halfway through, until they turn golden brown.

  7. Serve the potatoes hot.

2. Air Fryer Baked Potato

Air Fryer Baked Potato

There’s nothing quite like a perfectly baked potato, and making them in the air fryer has become my favorite way to do it. The skins get so wonderfully crispy while the insides stay fluffy and tender, and it only takes a little oil and salt to make them taste amazing. I love how I can toss a couple of potatoes in the air fryer and let them cook while I prep toppings or the rest of dinner. Whether I load them up with cheese, sour cream, and chives or keep it simple with just a pat of butter, these air fryer baked potatoes are always a comforting, no-fuss dinner option in my kitchen.

  • 2 tbsp honey
  • 2 cloves of garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp corn starch (optional if you want to make the sauce sticky – not used in recipe)

Instructions:

  1. Cut the cauliflower into florets.

  2. In a medium bowl, whisk together the milk, flour, garlic powder, onion powder, salt, and pepper until smooth.

  3. Add the cauliflower florets to the bowl and coat them well in the mixture.

  4. Roll the coated florets in panko breadcrumbs until fully covered.

  5. Arrange the florets in a single layer in the air fryer basket.

  6. Air fry at 350°F for 20 minutes.

  7. While the cauliflower cooks, prepare the teriyaki sauce.

  8. In a saucepan, combine water, soy sauce, brown sugar, honey, minced garlic, and minced ginger. Cook over medium-high heat for 10–15 minutes, until the liquid reduces and the sauce thickens.

  9. Once the cauliflower is done, drizzle with the teriyaki sauce and garnish with sliced scallions and sesame seeds.
