Plus, they’re easy to make in advance, which makes them perfect for busy days when I still want to serve something delicious to my family.
I love how versatile these mini quiches are too. You can easily swap in different types of cheese or even throw in a bit of spinach for a burst of color and flavor. The crispy crust adds such a nice texture to each bite, and I always find myself sneaking a few extras because they’re just that good. If you haven’t yet tried making quiches from scratch, don’t worry – this recipe is simple, and the results are so rewarding.
And, of course, these mini salmon quiches hold a special place in my heart because they’re one of those recipes I can always rely on. They’re quick to prepare, full of flavor, and perfect for serving a crowd – or just enjoying with the family for a cozy meal. It’s a great way to treat yourself and those you love to something homemade and memorable!

Ingredients
For the Crust:
- 1 cup all-purpose flour – This flour forms the base for a flaky, buttery crust that holds everything together perfectly.
- 1/4 cup unsalted butter, chilled and cubed – Cold butter ensures the crust will have a delicate, melt-in-your-mouth texture.
- 2-3 tablespoons ice cold water – Adding just the right amount of cold water helps bring the dough together without overworking it.
- Pinch of salt – A small pinch of salt enhances the flavor of the crust, balancing the richness of the butter.
For the Filling:
- 1/2 cup smoked salmon, chopped – The smoky salmon adds a savory depth and a wonderful burst of flavor to each bite.
- 1/2 cup grated cheddar or Gruyere cheese – The cheese adds a creamy, melty texture that pairs beautifully with the salmon.
- 4 medium eggs – The eggs provide the creamy base that binds all the ingredients together, giving the quiche its custard-like texture.
- 1/2 cup heavy cream – This rich cream ensures the filling is smooth and velvety, creating the perfect texture.
- Salt and pepper to taste – Seasoning brings out the natural flavors of the ingredients, giving the quiche a balanced taste.
- Chopped dill to garnish – Fresh dill adds a bright, herbaceous touch that complements the smoky salmon and creamy filling.

For the Crust:
1. Preheat your oven to 350°F (175°C) and grease and flour a mini muffin tin.
2. In a bowl, combine the flour and salt. Add the cubed butter and blend gently with your fingers or a pastry cutter until the mixture resembles coarse crumbs.

4. On a floured surface, roll out the dough and cut into circles that will fit your mini muffin tin cups.
5. Press each dough circle into the cups to form mini crusts. Use a fork to prick the bottoms to prevent puffing. Set the crusts in the fridge while you prepare the filling.

For the Filling:
1. In a separate bowl, whisk the eggs, cream, salt, and pepper until well combined.

2. Add a small amount of chopped smoked salmon and grated cheese to each mini crust.

3. Pour the egg mixture over the salmon and cheese, filling each crust almost to the top.

4. Place the muffin tin in the oven and bake for 15-20 minutes, or until the quiches are set and golden on top.

5. Once baked, let the quiches cool for a few minutes before carefully removing them from the tin.
6. Garnish with freshly chopped dill before serving.

Tips & Tricks for Perfect Mini Salmon Quiches
- Use cold butter for the crust – Ensuring the butter is chilled helps create a flaky, tender crust.
- Chill the crust before baking – Refrigerating the dough before filling prevents it from shrinking while baking.
- Don’t overwork the dough – Gently combine the ingredients to keep the crust light and flaky.
- Customize the filling – Feel free to swap the smoked salmon for another type of fish or add spinach for extra flavor.
- Use a mix of cheeses – Try combining cheddar with Gruyere or even a bit of cream cheese for a rich, creamy texture.
- Pre-bake the crusts for a crispier base – If you prefer an extra-crisp crust, blind bake the mini crusts for 5-7 minutes before adding the filling.
- Check the quiches early – Start checking the quiches a few minutes before the timer goes off to ensure they don’t overcook.
- Let them cool slightly – Allow the quiches to rest for a few minutes after baking to set the filling before serving.
- Garnish with fresh herbs – A sprinkle of fresh dill or chives will add brightness and a lovely touch of flavor.
